Annika Ribeiro: Lime & Ginger Chicken with Mashed Sweet Potatoes

Very resfreshing and healthy recipe!!!

- chicken breast filet
- honey
- juice from one lime
- grated ginger
- sweet potatoes
- lemon pepper (or normal pepper)
- salt
- butter

First you coat the chicken in salt and lemon pepper (I used the one from spirit of spice). Then you put the chicken in a bowl and add the fresh lime juice, grated ginger and honey. The amount of each ingredient depends on your taste. If you like it a bit spicy you can add more ginger, or if a bit more sweet, you add more honey....

Meanwhile you peel the sweet potatoes and cut them in small pieces. You cook them around 15 min. until they are soft. Then you remove the water and add a bit of butter and grated ginger. Now you will mash this mixture with a blender until you have a smooth puree.

During that time you also cook the chicken breast on high heat. Both sides should be a bit brown. Then you add the rest of the marinate juice and let it simmer a bit. I used very thin chicken breast, so it did not take more than 10 minutes to cook them.

Ready to serve!!!
