Liane Brenner: Spätzle (German side dish)


These are homemade Spätzle, a Southern German side dish. Perfect for any meat. Serve with sauce or simply add some melted cheese or butter for additional taste. (I prefer simple butter, does allow for the unique taste of the Spätzle dough).

Recipe is:


250 flour
250 Quark (curd cheese/Requesón)
4 eggs
1 tablespoon salt
50 ml water

Mix all ingredients and let stand for a few minutes. (Dough is thick, ensure it's not too watery, if so add additional flour).

Start a pot of boiling water with some salt added.

Spread dough on a cutting board as thin layer. Slowly dribble dough from cutting board into boiling water. (Take turns, do not use all dough at once). Raw Dough drops will sink first to the bottom of the pot. After roughly 20 seconds they are done & will start raising back up to floating on top of the water - fish out & enjoy!
