Spicy Coconut by Najia Kilper (4 pers.)

What you need:

Basically any kind of vegetables of the season, this time I took:

- 2 Carrots
- 1 Broccoli
- 1 Zucchini
- 1 small red paprika
- 10 Snow peas
- One cup of rice
- 500 ml of coconut milk
- 3 teaspoons of yellow curry
- 1 teaspoon of red chili powder(carefully Spicy! ;))

(Vegetable stock to make the sauce a bit more liquid Salt)

[This time I chose the vegan version, but if you like you could also add chicken, beef or some seafood to the vegetables]

Step 1: Cut all vegetables in pieces, but not too small and put them into a hot pan with a bit of olive oil and salt:



Step 2: Let the vegetables cook for 10 minutes.

Step 3: Add the coconut milk, with the curry and the chili powder to the vegetables into the pan. Stir well and let it cook for about 15- 20 minutes until the vegetables are well cooked.






Step 4: During the time the vegetables are cooking, you can prepare the rice. (Remember for every part of rice, use 3 parts of water)

Step 5: If the sauce is getting to thick you can put in a bit of vegetable stock to make it a bit more liquid.

Step 6: Put everything together et voilà J
